Today’s Lupie Mama shares a go to comfort recipe with us. This is a go to recipe that soothes the soul. Perfect for pain days. I’m so happy Ileana is sharing her story of how having a supportive family is so important when having chronic illnesses.  

 

My name is Ileana Mazzurco and I am 53 years old. I am married to the love of my life Joseph and we will be celebrating our 23rd wedding anniversary on June 25. I am blessed to have three stepsons and a granddaughter.  After three miscarriages and many tests I had my miracle/rainbow baby who is about to turned 20 years old on November 4. Emily is everything and anything that any parent could’ve ask for and I am so lucky that I am her mom.

 

After suffering my first miscarriage my doctor did a blood test and I was diagnosed with antiphospholipid syndrome. This condition was causing me to miscarry and unfortunately had two additional ones but after finding a treatment that worked, I was able to deliver Emily on November 4, 1998at 4:04 pm. All in all, after being surrounded through my labor by my husband, my loving cousin Mirta,  and my mom I had a pretty easy delivery. Unfortunately one hour later I hemorrhaged and had many complications but after getting myself stronger I was able to leave the hospital four days later with my beautiful daughter.

 

In July 1999 after experiencing some aches and pain that I disregarded because I was planning a big family party,  I went to my physician and was given a round of tests which determined that I had lupus (SLE).

 

I have had many ups and downs but I have tried my best to always be at every event, game or performance that my daughter is involved in. The times that I feel at my lowest or am in pain I try to rest as much as possible but I know in the end that I am a fighter and this will not destroy me. I have the greatest support system and my family is extremely supportive and will drop anything to help.

 

 

My go to recipe when I need something comforting is my special chicken noodle soup:

 

4 boneless chicken breasts

2 large cans of chicken broth 

1 cup of small carrots 

1 can of tomato sauce 

1/2 cup of chopped onions

1 green pepper ( cut in half it is

Just used for flavor)

1 large potato cubed

2 garlic cloves 

3-4 packets of Sazon 

1/2 a pack of Goya Fideos 

Salt and pepper as needed 

 

Boil chicken until fully cooked  with onions, pepper, garlic and carrots in chicken broth.

Cook until chicken is cooked and remove chicken from pot in order to shred. This is when I take out the pepper and garlic. 

Add 1/2 can of tomato sauce and 2-3 packets of Sazon. 

 

Place shredded chicken back into pot and add cubed potatoes. Cook until potatoes are soft then add fideos.  Salt and pepper for taste
